speedy raspberry ice cream
This berry-laden healthy summer refresher doesn’t need an ice cream maker, and takes less than 5 minutes to make. My raspberry ice cream recipe is suitable for those on a ketogenic diet.
Serves 2 people
1 and 1/4 cups frozen raspberries
1/2 cup whey protein, vanilla flavoured
1/4 cup coconut milk
1 tbsp unrefined coconut oil
Place all the ingredients into a blender and pulse until smooth. You may have to scrape the side of the liquidiser as you blend. Serve immediately or place in an airtight container and store in the freezer.

You may choose to use other berries such as strawberries or blackberries, instead of raspberries. The berries may be sweet enough to give the ice cream a naturally sweet taste, in which case you may decide to omit the stevia. For me, 5 drops of liquid stevia is an ample amount.
