watermelon and feta salad

Sweet, crispy and refreshing – this easy watermelon and feta salad recipe will be on your go-to list of tried-and-tested favourites!

Makes 8 servings

Ingredients

1 red onion

juice of 3 to 4 limes

1 and 1/2 kg watermelon

250g feta cheese

1 bunch flat-leaf parsley

1 bunch fresh mint or basil, chopped

4 tbsp extra virgin olive oil

100g pitted black olives

black pepper

Method

Cut the red onion into fine half-moons and put in a small bowl with the lime juice.

Remove the pips from the watermelon and cut into uniform triangular chunks. Do the same to the feta and put them both into a wide shallow bowl. Tear off sprigs of parsley and add to the bowl with the chopped mint/basil.

Tip in the onions with their juices, and then add the oil and olives. Toss the salad gently so as not to break up the shapes of the feta and the watermelon. Add black pepper to taste and voila… a wonderful light lunch!
