Chocolate brittle recipe with cranberries

chocolate brittle

This divine chocolatey treat is the ultimate comfort food. It uses good quality dark chocolate, plus other healthy ingredients, and is so easy to make.

Ingredients

3 x 150g organic dark chocolate bars (between 75% to 80%)

a handful of goji berries, coconut flakes, dried cranberries (or any other topping of your choice)

rind of 1 orange

Method

On a flat work surface near the hob, lay out a baking tray covered in baking parchment.

Over a gentle heat, using a double boiler, melt the chocolate. Once melted, work quickly and pour the melted chocolate onto the baking parchment. Spread it out evenly using a spatula, making sure to cover the entire baking sheet. The thinner you spread it, the thinner your brittle will be.

Next, take handfuls of the different toppings and spread them out over the melted chocolate. Finally, grate the orange rind over the top.

Transfer the tray to the refrigerator and allow to cool completely. Once cooled, peel off the parchment and break into chips. Store in a container in the refrigerator.

Andy’s Sugar Safe® Tips

Studies are showing that dark chocolate (with a cocoa percentage of around 75% or more) is a powerful source of antioxidants. Experts have found it is good for the heart, circulation and brain. Eat it in moderation though, remembering to limit your daily sugar intake to no more than 25g per day.
