Lightly stewed plums

These lightly stewed plums are delicious served warm or cold, and would also make a refreshing dessert or compote.

Serves 4

Ingredients

8 purple or yellow plums, halved and stoned

4 x 10-12 cm strips orange zest (remove with peeler)

freshly squeezed juice 2 large oranges

1/2 tsp ground cinnamon

to make the stewed plums

Place the plums in a saucepan. Add the zest and juice, 300 ml of water and the cinnamon. Stir lightly. Bring the liquid to a quick boil, then simmer and cover with a lid. Reduce the heat to low and cook for 10 – 15 minutes or until the plums are soft but slightly al dente.

Serve with your choice of yoghurt or own their own as a dessert and enjoy!

Andy’s Sugar Safe® tips

Plums are packed with plant compounds which have antioxidant and anti-inflammatory properties. They are especially rich in a polyphenol called chlorogenic acid, a compound also found in coffee, that appears to help balance blood sugar and regulate appetite.
