nutty chocolate granola

This recipe is full of protein, fibre and healthy fats and is incredibly versatile. Add it to your choice of yoghurt or milk, or have a handful as a snack on the go.

Ingredients

6 tbsp coconut oil

2 tbsp cocoa powder

2 tbsp maple syrup

1 handful chopped dates

200g jumbo oats

100g mixed nuts, chopped

1 handful coconut curls

75 ml full-fat greek yoghurt

Method
Pre-heat the oven to 180C. Melt the coconut oil with the maple syrup and cocoa powder in a large saucepan over a gentle heat until melted. Remove from the heat, add the oats and coat them with the mixture.

Scatter the mixture over a baking tray and bake for 10 minutes. Remove, stir in the nuts, dates and coconut, and bake for a further 10 minutes.

Remove from the oven and allow to cool. Keep in an airtight container and serve a handful of it with full-fat Greek yoghurt or any other yoghurt or milk of your choice as a hearty breakfast!

Andy’s Sugar Safe Tips:
Remember that dates and maple syrup have a high fructose content, so if you have this as a snack or breakfast, keep an eye on your sugar/fructose intake for the day and try to limit it. The fibre, healthy fats and protein will help to prevent blood sugar spikes and will keep you full and focussed throughout the day.
