Add the quinoa to a pot containing the water, seasoned with 2 teaspoons of salt. Bring to the boil and then simmer, covered on a very low heat for 20 minutes.
Without taking the lid off the pot, turn off the heat and leave for another ten minutes. Then uncover, fluff with a fork and set aside to cool.
