simple omelette

This omelette is creamy and delicious, and so simple to make. It can be served plain or filled with a variety of fillings, such as spinach, cheese, mushrooms or chives. It is perfect for breakfast or a light lunch.

Serves 1

Ingredients

1 tsp unsalted butter

2-3 large, fresh organic eggs

Himalayan salt

Pepper, to taste

Method

Pre-heat a skillet over a medium heat. Add the butter. Once melted, add the eggs and scramble with a spatula. Once the eggs begin to set, shake the pan back and forth while still scrambling, so the runny eggs fill in any gaps on the bottom. Once the egg has almost set, turn off the heat and evenly smooth out.

Immediately add a bit of filling if you like on one-third of the omelette, and let it sit for around 30 seconds to set. Fold the omelette over the filling, like the first fold of an envelope, then slide the omelette to the edge of the pan. Place the open end onto the plate and flip the omelette over to finish the folding. Serve immediately.
