tempeh strips

These tempeh strips taste delicious with a salad such as warm barley, mushroom, tomato, and rocket or pea and avocado salad. It is a great source of plant-based protein and a fantastic staple in a vegetarian or vegan diet.

Makes 10 to 12 servings

Ingredients

1 tsp garlic, minced

1/4 cup tamari

1 tsp smoked paprika

3 tbsp organic maple syrup

1 tbsp onion granules

pinch of Himalayan salt

freshly ground black pepper

220g tempeh, steamed for 20 minutes, then sliced into 1/4-inch strips

1 to 3 tbsp coconut oil for frying

Method

To prepare the marinade, in a small bowl, add the garlic, tamari, smoked paprika, maple syrup, onion granules, Himalayan salt and freshly ground black pepper.

Whisk well and pour the marinade over the tempeh strips. Allow to marinate overnight.

Heat a frying pan over medium heat and, once hot, add the oil, followed by the tempeh. Let cook for a few minutes and then flip and cook on the other side until golden brown and heated through.

This recipe contains maple syrup, which has a high fructose content, so keep this in mind when planning your meals for the day, and remember to try and limit your fructose intake to 25g. Roughly 1 tbsp of maple syrup contains 12g sucrose (made up of a combination of glucose and fructose).
