tenderstem broccoli and cauliflower salad with feta

This salad is quick and easy to make and is incredibly filling and nutrient dense. The cruciferous vegetables are a rich source of fibre, magnesium and B vitamins, whilst the seeds, oil, avocado, eggs and feta are excellent sources of protein and healthy fats…and all in one portion!

Ingredients

100 g salad leaves of your choice

50 g tenderstem broccoli

50 g tenderstem cauliflower

2 eggs boiled and sliced

50 g feta cheese cut into chunks

2 avocados cut into chunks

Assorted pumpkin and sunflower seeds

Handful pomegranate seeds

White balsamic vinegar

Toasted sesame oil

Salt and pepper to season

Method

Steam the broccoli and cauliflower until just tender but crunchy, and roughly chop.

In a salad bowl combine all the ingredients. Drizzle over them the toasted sesame oil  and balsamic vinegar, season with salt and pepper and sprinkle with all the seeds.
