Method
Cut the red onion into fine half-moons and put in a small bowl with the lime juice.
Remove the pips from the watermelon and cut into uniform triangular chunks. Do the same to the feta and put them both into a wide shallow bowl. Tear off sprigs of parsley and add to the bowl with the chopped mint/basil.
Tip in the onions with their juices, and then add the oil and olives. Toss the salad gently so as not to break up the shapes of the feta and the watermelon. Add black pepper to taste and voila… a wonderful light lunch!
